Ingredients:
8 slices bacon
1 bag brussel sprouts, chopped
2 heads romaine lettuce, chopped
1 french loaf, cut in small cubes
2 tomatoes, diced
1 handful snap peas, halved
Caesar dressing (below)
cracked pepper
1 cup parmesan cheese
Dressing:
1/2 cup mayo
1/3 cup crema
2 T olive oil
1/2 cup water (more as needed)
1 tsp anchovie paste
2 T lemon juice
1/4 cup parmesan cheese
1 tsp sriracha
2 T dijon mustard
1 tsp salt
pepper to taste
Directions:
Cook bacon in the oven at 400 for about 15 minutes or to desired crispness. Or you can cook on the stove if that is your preferred method. Heat 1 T oil in a pan and add the cut brussel sprouts. Season with salt and pepper and cook until charred, about 15 minutes. Toss cut pieces of french bread in oil and season with seasoning salt. Roast in the oven (with the bacon) also for about 15 minutes until crisp. Combine all the dressing ingredients and whisk vigorously. Let sit while you assemble your salad. When the bacon is finished, cut into small pieces. Add all your salad toppings to a bowl, add dressing, and top with parmesan and cracked pepper. This will make about 4 medium sized salads.

I love a good salad! Combining the classic brussel sprout/bacon flavor with the Caesar dressing is delicious, along with all the chopped fresh veggies! It is so yummy, fresh, and filling. I like to have a nice crusty piece of bread on the side. Yum, yum!
